Doughless-Gluten free Pizza

So as it is now nearly July, although the weather in Dublin isn't exactly showing it, I think it's safe to say that bikini season is well and truly upon us!!!
If anyone is like me and more than likely dieting for said bikini season, id say it's safe to say that you obviously have cravings?? Well me TOOO!!!
Today....the craving was pizza!! I mean bad cravings!!!! But then I remembered.......a while ago while pursing around the Lauren Conrad website I found a recipe for a doughless pizza using cauliflower!! Now I know this sounds slightly....awful!! But I gave in for my cravings and decided to go down the healthy root!!!
BOY WAS THIS A GOOD IDEA!!! I have never tasted something soo like pizza yet completely guilt free. I did my own interpretation on her recipe-- aka I couldn't find any oregano, used less cheese and made my own sauce yet it was incredible!!
Why not follow my recipe below and try it for yourself!!!!
Ingredients
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 teaspoon dried oregano
½ teaspoon crushed garlic
½ teaspoon garlic salt
olive oil (optional)
pizza sauce, shredded cheese and choice of your toppings*
To rice the cauliflower-
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater).










Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.





One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make The Pizza-
1. Preheat oven to 230 degrees. 2. Spray a cookie sheet with non-stick cooking spray.
3. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir.




4. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
4.1- you can here do what I chose to do and enjoy a glass of wine while marvelling at your pizza in the oven




5. Bake at 230 degrees for 15 minutes.
Remove from oven.





To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).





*Note: Toppings need to be precooked since you are only broiling for a few minutes.
*also for tomato sauce I made up my own concoction that takes literally 5 minutes- tomato purée,2 garlic cloves and chilli flakes mixed together!!! Can't get any easier!!!
And then Voila .......





This is seriously one of the most amazing things I have ever tasted!! And as the boyfriend said "god bless Lauren Conrad" yes it is really that good!!!!
