My Quick and Easy Guacamole

So as many of you may already know I have a slight obsession with mexican food- case in point my past posts - My Mexican Food Obsession and Saturday Night Fiesta . There is something about the mexican cuisine that I just love, and I can't stop trying to recreate it all the time. 

I featured this recipe slightly in my Saturday Night Fiesta post but decided to do it again with a little twist. This is seriously the most amazing Guacamole I've had. Most guacamole's tend to be too soft and over blended for my taste. I like a Guacamole with chunks and bits in it. 

For this recipe you will need; 


2 Avocado's- please be careful when deseeding them 
Juice of 1 lime
1 green chill- we also added a red one at the end
2 cloves of garlic
handful of coriander.


Chop up your chilli, your garlic and your coriander and add to a food processor, with that add your de-seeded and de-skinned avocado's , and the juice of your lime. 
Throw in a tiny dash of olive oil just to keep it moist and a nice pinch of sea salt
Then Blitz

Its up to you when you feel its been mixed enough, I usually like mine quite chunky. 

We toasted some plain flour tortillas on a slightly oiled griddle pad, cut in to triangles and covered in sea salt to give them some flavor. This works as a great low fat option to tortilla chips. If anyone has a better recipe for this please link it. 




We added red chills and a pinch more salt to finish the guacamole. With our homemade tortilla chips it was the perfect starter. 

However in keeping with our mexican theme I was the ever duty full girlfriend and made my boyfriends favorite meal of mexican fajitas, served in lettuce leaves instead of wraps. The recipe is in my Saturday Night Fiesta post.
